Another new restaurant is on the horizon for downtown Bozeman, with Bitterroot Bistro expected to open its doors at 19 S. Wilson this winter.
They have a proposed menu posted on their website which includes Bison tartare, Montana rib-eye and croquettes featuring local chevre from Almatheia Dairy. Their Instagram page shows their Executive Chef Gabriel Lopez hard at work creating some beautiful food!
Most recently this location was home to Last Call Modern Mexican, which closed unexpectedly 6 months ago. Before that, it was home to Barley & Vine which closed in the spring of 2020 and merged with Starky’s to become Revelry. But if you’ve been in Bozeman for a handful of years you may remember this space as home to Over the Tapas (raise your hand if you still miss OTT!)
